Everybody likes to snack and these chewy almond cake balls are easy to make, sweet enough to satisfy a craving and hearty enough to keep you going between meals.
Almonds are a super food. Most notably touted for their vitamin E content few people realise they are also a great source of calcium, magnesium and iron. Packed full of plant based protein and fibre, they are wholefoods that make you feel and look your best.
Makes 20 balls
- ½ cup maple syrup
- 1 tsp maca powder
- 2 tsp cinnamon powder
- 2½ cups almonds
- ½ cup cacao nibs
- ½ cup dried mulberries
Combine the ingredients in a high speed blender or food processor. Once cool enough to handle, separate into 20 and roll into balls. Squeeze out any excess oil.
Pulse blend the mulberries and cacao nibs together until small pieces.
Roll the almond balls in the coating. Don’t be afraid to squeeze the coating onto the balls, you can reshape them once they are covered.
Extra coating can be used on smoothie bowls, to top ice cream and fruit salads.
