Mindful Living with Matthew Kenney

Matthew Kenney is an American celebrity chef, entrepreneur, author and educator specialising in plant based cuisine. He is the founder of lifestyle company Matthew Kenney CuisinePlantLab culinary school and six plant based restaurants worldwide. Matthew is based in Los Angeles where he is faithful companion to Rumple the cat.

What time do you wake up?

Typically around 7 am, although I travel often and my mind may be in another time zone entirely which can make it unpredictable. Seven hours sleep is ideal for me.

How do you start your day?

I have a mindfulness practice I do before getting out of bed. I then start the day with a litre of lemon and water and quiet time, going through correspondence that came in during the night.

What do you eat for breakfast?

I generally have an almond latte and either a green juice or an avocado toast.

What do you do with your morning?

I generally exercise for an hour and focus on projects that involve writing, thinking, creating or addressing business obligations. I rarely have morning meetings although I have intense mornings at work.

What daily rituals are important to you?

Mindfulness practice, exercise, spending quality time every day with my girlfriend, slowing down long enough to appreciate delicious plant based meals.

Do you exercise?

I either run, go to to the gym, play tennis or do yoga pretty much every day. We may hike on the weekends and I ride my bike all over Venice for meetings. I like movement in my morning although I’m not so rigid about times or even what I do. I do what my body asks me to.

What do you eat for lunch?

Almost always some variation on a big salad with a lot of nutritious components, good healthy fats, especially avocado.

Do you have a set of tasks/ responsibilities to handle every day?

My master list is an evolving document that never ends. Every day is different.

What does your afternoon look like?

I take most of my calls and meetings in the afternoons between 2 p.m. and 6 p.m., it depends on where I am. If I’m in New York, I may have six to seven meetings back to back without leaving one space. It’s a bit more peaceful in L.A. where I do more creative work.

Do you spend time with friends daily?

Many of my close friends are spread out around the world. We all talk frequently by phone, although face time is less these days. My girlfriend is also my best friend and we spend a tremendous amount of time together.

How do you begin your evening?

I like taking a walk around Venice if I’m home, on a walking street or on the boardwalk. I love wine, so generally enjoy a glass of champagne or white wine as well.

Does the day feel like one period to you or do you segment it?

I have fast moving days and definitely make a shift after sunset. I will still handle correspondence but work slows down and I like to make time for socialising, going out to try new restaurants or seeing films.

What do you eat for dinner?

My diet has only one constant which is that I eat unprocessed, plant based foods that are as seasonal and local as possible.

How do you spend your time before bed?

I dine late most evenings so generally there is only time for part of a movie or some light reading.

Do you have a night time routine?

I take the night as it comes.

What are the last things you focus on before you go to sleep?

Most days I’m so tired by the time I go to bed, I just release myself into the night.
