No Bake Vegan Black Bean Brownies

Black bean brownies are all the rage due to their nutritional potency but what if you could enjoy all of the benefits and deliciousness with little effort?

Now you can! These no bake brownies require no melting, cooking and little prepping, just throw everything into a high powered blender or food processor and set in the fridge.

Black beans are rich in copper, manganese, phosphorous, fibre, potassium, folate, magnesium, protein, iron, omega 3, flavonoids and phytonutrients. They support a healthy digestive tract, reduce cholesterol, balance blood sugar, decrease the risk of heart disease and provide anti-inflammatory and antioxidant support.

Brownies

Ingredients

  • ½ cup well cooked black beans
  • ½ cup oats
  • 1 vanilla bean
  • 1 tbsp cacao butter
  • 1 tbsp cacao powder
  • 1 tbsp carob powder
  • 2 tbsp maple syrup

Ganache

Ingredients

  • 1 pinch salt
  • 2 tbsp cacao butter
  • 2 tbsp maple syrup
  • 4 tbsp plant milk
  • 5 tbsp cacao powder

Method

Blend the brownie ingredients until fully mixed. You do not need to melt the cacao butter, make flour of the oats or fiddle around with the vanilla bean – just blend them as they are.

Once the mixture is smooth, allow to cool and press firmly into a small casserole dish.

Blend the ganache ingredients until fully mixed. Allow to cool and spread over the brownie.

Cut into squares and serve alone or with fresh strawberries.
