Originally designed to preserve fruits for months after harvest, jam has come to be a favourite every day food and this dried apricot jam recipe can be made at any time during the year. Free from refined sugar, it is sweetened with coconut sugar which is the dried nectar of the coconut flower and set with agar agar, a gelling agent extracted from algae.
Dried apricots have three times the potassium of bananas with less sodium which supports heart and blood health. A great source of vitamins A and C, antioxidants, phytonutrients and carotenoids they support the immune system, protect against cancer, support eyesight and provide anti inflammatory support. They are also a rich source of fibre which keeps the digestive tract healthy.
- ½ tbsp agar agar flakes
- 30 g coconut sugar
- 100 g dried apricots*
- 260 ml water
*Choose organic fruit that is sulphite free.
Blend all ingredients together for 30 seconds and in a saucepan simmer over a medium heat for 40 minutes. Allow to cool before eating.
This jam will keep refrigerated in an airtight container for two weeks.
