Simple Holiday Salad

This simple holiday salad is full of festive flavours that work together as a great side dish or starter. Made simply with brussel sprouts, pomegranate seeds, hemp seeds and vinegar, the peppery flavour of the raw sprouts is tempered by the salt which makes them soft and delicious.

Brussel sprouts are a superfood, providing healthy amounts of vitamins and minerals per serving, including vitamins A, B1, B2, B3, B6, C and K as well as folate, manganese, choline, copper, potassium, phosphorous, iron, pantothenic acid, magnesium, calcium and zinc, as well as being a source of protein and omega 3 fatty acids. Supporting the body’s detoxification, antioxidant and anti inflammatory systems, brussel sprouts are believed to prevent cancer, support heart health and keep the digestive system operating well.

Ingredients

  • 1 tsp Himalayan salt
  • 1½ tbsp apple cider vinegar
  • 3 tbsp shelled hemp seeds
  • 200 g pomegranate seeds
  • 400 g prepared brussel sprouts

Method

Slice the brussel sprouts and separate them as much as possible so that they make a mound of sliced leaves. Add them to a bowl and sprinkle with salt. Massage the salt into the leaves for at least ten minutes to ensure all are coated and reduced in size. Mix in the hemp seeds and pomegranate seeds and dress with vinegar.
