Coconut and Goji Berry Bites

These tropical, creamy coconut and goji berry bites are a delicious snack, breakfast option or on the go energy boost. Combining baobab, cashews, coconut, dates and gojis, they are protein packed, full of healthy carbohydrates and filling whole food plant fats.

Makes 20 Bites

Ingredients
  • 1 tsp baobab powder
  • 20 g + 35 g coconut chips
  • 40 g goji berries
  • 70 g cashews
  • 90 g pitted medjool dates

Method

Pulse 20 g coconut chips until broken down and remove from the blender or food processor. Add the rest of the ingredients and process until a dough has formed.

Separate the dough into quarters and then each quarter into five equal parts. Roll each part into balls. Roll the balls in the processed coconut to coat them, pressing the coconut onto them firmly.

Refrigerate for one hour to set. Store in an airtight container for up to one week.
