Cranberry and Orange Muffin Cookies

The best of muffins and cookies come together in these cranberry and orange treats. Sweet and fruity, they are a little bit cakey and a little bit chewy and absolutely delicious.

Makes Eight Muffin Cookies


  • 1 tsp baking soda
  • 5 g orange zest
  • 45 ml orange juice
  • 100 g oranges
  • 100 g sunflower seeds
  • 120 g pitted dates
  • 120 g gluten free oats
  • 140 ml water
  • 175 g dried cranberries


Blend the sunflower seeds with the water and orange juice until smooth.

Add the rest of the ingredients apart from the cranberries and blend again until smooth.

Mix in the cranberries and spoon 8 equal mounds onto a lined baking tray and bake at 180°C for 28 minutes.
