Curried Rice and Lentils

Creamy, spicy and flavourful, this simple and easy to make recipe is full of healthy carbohydrates, protein, antioxidants, vitamins and minerals. Filling yet light, curried rice and lentils is the perfect warming dish, great as a main meal or side.

Curry is made with a mixture of healing spices, often dried and powdered. This recipe uses curry powder which is generally a combination of mustard, cumin, turmeric, coriander, fennel and black pepper and is antioxidant rich, boosts immunity, detoxes the body, reduces inflammation, protects cardiovascular health, boosts bone health, is antibacterial and promotes healthy liver function.

Makes Two Large Servings


  • ¼ tsp Himalayan salt
  • ½ tbsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp curry powder
  • 4 cups water
  • 200 g green lentils
  • 200 g Jasmine rice
  • 250 g fresh tomatoes


Chop the tomatoes and add to a large pot with the rest of the ingredients.

Boil for 30 minutes or until the water has disappeared, stirring occasionally.
