A simple yet delicious tomato sauce can make a dish. Perfect with pasta, as a base for lasagne and bolognaise or even as a salsa, this easy, fat free, basil and sundried tomato sauce is simple to make and packed full of flavour.

Makes 2 Generous Servings
- ⅛ tsp Himalayan salt
- ⅛ tsp white pepper
- 1 tsp dried basil
- 1 tbsp tapioca flour
- 6 sundried tomato halves
- 100 ml water
- 400 g chopped tomatoes
In a blender combine the garlic cloves, sundried tomato halves, flour and 200 g of the chopped tomatoes. Mix in a saucepan with the water, leftover 200 g of chopped tomatoes, basil, salt and pepper.
Simmer on a medium heat for 15 minutes, stirring occasionally and serve.
This sauce will keep refrigerated in a sealed glass jar for three days.
