Easy, Fat Free, Basil and Sundried Tomato Sauce

A simple yet delicious tomato sauce can make a dish. Perfect with pasta, as a base for lasagne and bolognaise or even as a salsa, this easy, fat free, basil and sundried tomato sauce is simple to make and packed full of flavour.

Tomatoes are one of the healthiest and easiest to access fruits available that can be grown all year round on window sills and in greenhouses. Ingredients

  • ⅛ tsp Himalayan salt
  • ⅛ tsp white pepper
  • 1 tsp dried basil
  • 1 tbsp tapioca flour
  • 6 sundried tomato halves
  • 100 ml water
  • 400 g chopped tomatoes

Method

In a blender combine the garlic cloves, sundried tomato halves, flour and 200 g of the chopped tomatoes. Mix in a saucepan with the water, leftover 200 g of chopped tomatoes, basil, salt and pepper.

Simmer on a medium heat for 15 minutes, stirring occasionally and serve.

This sauce will keep refrigerated in a sealed glass jar for three days.
