Bolognaise is traditionally a meat based sauce eaten with spaghetti or lasagne. This meat free version is made with lentils, vegetables and dried herbs, is oil and celery free and incredibly easy to make.
Dried basil and oregano give this recipe traditional flavours of Italy. Herbs are potent healing forces that help the body maintain health but they can be hard to source fresh at all times. Dried herbs offer a more concentrated source of flavour and maintain much of their nutritional profile, retaining significant levels of antioxidants, vitamins and minerals.
Dried basil is rich in calcium, potassium, magnesium, phosphorus and zinc as well as vitamins A, C and K and is commonly used to support and heal digestive health. Dried oregano is a good source of vitamins A, B6, C, E, and K, as well as folate, iron, magnesium, calcium and potassium and helps maintain healthy skin and hair.
- ¼ tsp Himalayan salt
- ½ cup red wine
- 1 tbsp dried basil
- 1 tbsp dried oregano
- 3 cups water
- 5 garlic cloves
- 40 g green lentils presoaked
- 85 g red onion
- 150 g carrot
- 400 g chopped tomatoes
Chop the onion and carrot and crush the garlic. Add everything to a large pot and cook on high for 45 minutes.
Combine with your favourite pasta.
