Made from just carob, cashews, coconut, dates and a little Himalayan salt, these five ingredient chocolate energy balls are refined sugar free, cacaco free, packed full of wholefood nutrition, easy to make and delicious to eat.
The creaminess in this recipe comes from the cashew nuts which are an energising and nutrient rich food that supports skin, bone, eye, cardiovascular, gallbladder and blood health. Technically a seed which grows outside of the cashew apple inside a double cased shell protected by a poisonous resin, cashews are a good source of minerals and antioxidants and contain have the highest amount of magnesium of any nut.
Makes 18 Balls
- ⅛ tsp Himalayan salt
- 2 tbsp carob powder
- 50 g cashews
- 70 g coconut chips
- 200 g dates
Separate 20 g coconut chips and gently pulse in a blender or food processor until they are reduced in size and broken up into smaller chips.
Remove and set aside and in a blender or food processor, combine the rest of the ingredients and process until smooth and well combined.
Remove and separate into 18 pieces. Roll each piece into a ball and roll again in the processed coconut chips, firmly pressing the coconut into the outside of the balls.
Eat immediately or refrigerate for 20 minutes to set. These store refrigerated in an airtight container for a week.
