Sweet loaves are a great way of getting extra fruit and fibre into our diets and this gluten free, refined sugar free and yeast free loaf is naturally sweetened with dates, apples and raisins, made from protein packed and flavourful buckwheat groats and given texture by pumpkin and sunflower seeds. A great snack, breakfast or bread for sweet sandwiches, this versatile loaf is a winner all round.
Apples are antioxidant rich, a good source of vitamins C, E and K, are full of fibre and eating just one apple a day has been proven to reduce LDL cholesterol. Myths suggest that apple skin contains all of the nutrients an apple has to offer rendering the flesh useless in a nutritional sense, however, the skin simply provides a more concentrated source of nutrients, with the flesh still highly nutritious.
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbsp ceylon cinnamon
- 30 g chia seeds
- 30 g sunflower seeds
- 30 g pumpkin seeds
- 100 g raisins
- 125 g peeled and chopped apple
- 150 g apple with skin
- 150 g medjool dates
- 230 ml almond milk
- 300 g buckwheat groats
Set the oven to 180°C.
Blend the buckwheat groats and chia seeds until a fine flour has formed. Set aside and blend together the apple with skin, dates, almond milk and cinnamon until smooth.
Mix the apple and date blend with the flour and add in the chopped apple, raisins, pumpkin seeds and sunflower seeds as well as the baking powder and baking soda and combine well.
Transfer to a silicone loaf case and bake for 45 minutes. Remove from the case and bake for a further 25 minutes. Allow to cool a little before slicing.
