Pesto, perfect on pasta, pizza, salads, in sandwiches and wraps, as a spread or dressing but sometimes just a little too oily. This oil free pumpkin seed pesto is light, fresh and as creamy as the traditional but contains whole fats, is easy to make, free from preservatives and absolutely delicious.
This pesto is also packed full of nutrition. Pumpkin seeds are a good source of omega 3, calcium, tryptophan and zinc. They promote heart, skin and nail health as well as aiding sleep and a calm mood. Avocados are a great source of vitamins K, C and E as well as B vitamins, potassium and folate. Loaded with healthy fats and soluble fibre, they keep the heart and digestive tract healthy and are believed to lower ‘bad’ cholesterol and triglyceride levels.
Makes 6 Servings
- ½ tsp Himalayan salt
- Juice of ½ lemon
- 1 medium sized avocado
- 1 cup pumpkin seeds
- 2 garlic cloves
- 2 sprigs fresh basil
Pulse blend ingredients until almost smooth and a little chunky.
Will keep refrigerated in an airtight container for three days.
