One Pot Vegan Spaghetti

One pot meals are easy to make, quick and filling and this one pot vegan spaghetti is no exception.


  • 300g spaghetti

Finely chop:

  • 1 small red onion
  • 1 courgette
  • 80g chestnut mushrooms

Blend together:

  • ½ tsp dried oregano
  • 1 tsp vegetable stock powder
  • 2 cups water
  • 3 cloves garlic
  • 4 sprigs fresh basil
  • 5 sundried tomatoes
  • 100g cherry tomatoes
  • 100g red bell pepper


Combine everything in a large pan, bring to the boil and simmer until the spaghetti is cooked. Be sure to stir to prevent the spaghetti from sticking.

Add more water if needed.

Season with black pepper. Top with nutritional yeast or your favourite vegan cheese and a few sprigs of fresh basil. Finely sliced avocado also works well as a topping.
