Raw Mango Noodles

Raw food does not need to be time consuming, dehydrated or full of nuts and seeds. These raw mango noodles are fresh and spicy as well as easy to prepare and full of nutrition.

Mangoes are rich in antioxidants and enzymes, protecting the body against cancer, aiding digestion and strengthening the immune system. They are a great source of vitamins A, C and B6 as well as iron, potassium and magnesium.

At around 95% water, cucumbers are extremely hydrating and contain essential electrolytes. Their anti-inflammatory and antixoidant properties fight disease, protect the brain and improve memory. They also lower blood pressure and ‘bad’ cholesterol.

Ginger is anti-inflammatory, anti-bacterial and anti-fungal. It fights infection, aids digestion and protects against diabetes and cancer.

Samphire is a great source of folic acid, vitamins A, B and C, magnesium, potassium, calcium and sodium. It boosts the immune system and bone health and improves sleep quality. It also provides anti-inflammatory support.


  • 1 inch ginger
  • 1 lime, juice and zest
  • 1 handful fresh coriander
  • 1 handful samphire
  • 1 small avocado
  • 2 garlic cloves
  • 2 spring onions
  • 2 cucumbers
  • 3 mangoes


Spiralise the cucumbers.

Blend the rest of the ingredients – apart from the samphire, lime zest, coriander and one spring onion – in a blender or food processor until smooth.

Mix the noodles with the samphire, finely chopped coriander, and the remaining spring onion, thinly sliced.

Top with the lime zest and season with black pepper.
