Raw Vanilla Biscuits

These sweet and crumbly raw vanilla biscuits are perfect as a light yet energising breakfast, alongside a cup of tea or as an on the go snack. Made without grains, gluten, oil or butter, they are wholefood goodness that tastes amazing.

Makes Six Biscuits

Ingredients 

  • 1 vanilla bean
  • 75 g buckwheat groats
  • 75 g dried mulberries
  • 80 g cashews

Method

In a high speed blender or food processor, process the ingredients on a low speed until they start to combine.

The mixture should hold together when balled up but still be crumbly.

Roll out and cut into biscuits approximately ½ – 1 cm tall. Store refrigerated in an airtight container for 1 week.
