Fudge, sticky, sweet and creamy but most often made from oils, sugar, dairy and animal fat which make it a less than healthy treat. Until now!
This vegan chocolate fudge is free from oil, processed sugar and dairy and made from wholefoods. It is raw, full of fibre, minerals and vitamins and absolutely delicious.
The star ingredient here is lucuma. A sweet fruit grown in Peru, Ecuador and Chile and revered for its nutritional properties as well as its caramel flavour, lucuma is a good source of carbohydrates, protein, trace minerals, zinc, calcium, iron, niacin, beta carotene and is naturally low GI.
- ¼ tsp Himalayan salt
- 1 tsp maca powder
- 1 tsp vanilla extract
- 1 cup cacao nibs
- 2 tbsp lucuma powder
- 250g pitted medjool dates
In a high speed blender or food processor, blend the cacao nibs on a low setting until a gooey paste has formed. Add in the rest of the ingredients and process until smooth.
On a sheet of baking paper, form into a square, 1 cm in height, wrap up and refrigerate for 1 hour.
Cut into squares and eat.
