Three Ingredient Raw Maqui Berry Ice Cream

This three ingredient ice cream is creamy, nutritious and takes only three steps: blend, freeze, eat.

Maqui berries are purple berries found in South America. A touted superfood they are rich in antioxidants, particularly anthocyanins which protect against high blood pressure and ‘bad’ cholesterol. Maqui berries have been used by ancient traditions onwards to support weight loss, slow ageing, improve skin health and support the immune system.

Strawberries are another potent powerhouse of a berry packed full of antioxidants, vitamins and minerals. Rich in folate, magnesium, vitamin C, potassium and soluble fibre, they are believed to aid eye health, boost immunity, protect against arthritis and gout and reduce ‘bad’ cholesterol.

Medjool dates are high in B6, magnesium, potassium and soluble fibre, as well as being a great source of niacin, calcium, phosphorous, riboflvain, vitamin K, thiamine, vitamin A and zinc. They offer a host of health benefits including improving bone health, reducing triglyceride levels, protecting against ‘bad’ cholesterol and promoting a healthy gut.

  • 1 tbsp maqui berry powder
  • 200g medjool dates
  • 300g frozen strawberries


Blend the ingredients into a smooth, thick liquid. Pour into a container and freeze overnight. Scoop and eat.

This ice cream does not require a re-blend once frozen. Something about the date-frozen strawberry combination makes this into a smooth, scoopable ice cream immediately.
