Crispy, sweet, rich and indulgent, chocolate puffed rice pieces are perfect for a snack, quick breakfast or dessert. This recipe is simple to make and free from dairy, refined sugar and other less than healthy ingredients.
Made from cacao, carob and brown rice, these antioxidant rich pieces are anti inflammatory, energising and nutritious. A source of sulphur, thiamin, niacin, magnesium, potassium, phosphorous, zinc, folate, iron, selenium, choline and vitamins A, B1, B2, B3, B5, B6, B9, C, and E, these are as good as it gets for chocolate puffed rice pieces.
Makes 8 Pieces
- ¼ tsp Himalayan salt
- 1 tsp vanilla powder
- 10 g carob powder
- 50 g cacao powder
- 50 g brown unsalted rice cakes
- 50 ml maple syrup
- 145 g finely grated cacao butter
Crumble the rice cakes into small pieces.
Melt the rest of the ingredients in a glass bowl over a saucepan half filled with water, over a high heat. Stir continuously and once all of the ingredients have combined into a melted chocolate, remove from the heat.
Immediately mix in the puffed rice and stir until well combined.
Firmly press into cupcake cases or a silicone muffin case and refrigerate for 30 minutes.
