Sushi is known for containing fish but for animal lovers out there, it doesn’t have to. This vegetable sushi is organic, wheat free, vegan and as sweet and salty as the original. Made with brown sushi rice, it is a great source of slow release carbohydrates as well as packed full of minerals from the seaweed.
Brown rice has only had its outer hull removed, so retains most of its nutrients after processing. High in manganese, selenium, phosphorous, magnesium and iron, it also contains a layer of essential fats. It protects against cancer, digestive disease and high levels of LDL cholesterol. Brown rice also has an antioxidant content equal to or higher than fruits and vegetables.
Nori provides the body with enzymes, thiamine, riboflavin, niacin, folate, bio-available iron, iodine and vitamins A and C amongst others. It is a good source of protein, helps lower LDL cholesterol, improves bone health, protects against cancer and supports the digestive tract.
Shiso leaves found in sushi ginger are a great source of calcium, vitamin C, potassium, magnesium, beta carotene, vitamin A and omega 3. They support the immune system, alleviate nausea and provide antioxidant and antiviral support.

Will you be replacing your nori with an organic version?
It is high on our priority list. We are working hard to try and source organic sea vegetables and as soon as we are able to convert our wild harvested seaveg we will do so.

Makes 3 sushi rolls/ 24 pieces of sushi
- 200g sushi rice
- ¼ cucumber, thinly sliced into strips
- ¼ red bell pepper, thinly sliced into strips
- ½ avocado, thinly sliced into strips
- ½ packet sushi ginger
- ½ tbsp rice vinegar
- ½ tbsp tamari
- 1 tbsp rice malt syrup (substitute with coconut sugar for gluten free)
Cook the rice as per the instructions on the packet and allow to cool.
Blend one nori sheet to produce a nori sprinkle. Mix the rice with the nori sprinkle, rice malt syrup, tamari and vinegar.
Separate the seasoned rice into three parts. Press each part onto a separate nori sheet – shiny side down – across the bottom four sections.
Layer the cucumber, pepper, avocado and ginger in rows across the middle of the rice.
Tightly roll the sushi by folding over the filled part of the nori sheet and tucking the bottom of the sheet around the filling at the top.
Press together, roll to seal and allow to sit for a minute or two before slicing.
Slice into eight pieces with a sharp knife by slicing through the middle, again through the middle of each piece and again through the middle of each of those pieces.
Serve with tamari for dipping and wasabi for extra spice. Enjoy!
